A great way to ensure you’re eating healthy is to prepare a few larger meals when you have time, and freeze them in individual portions. Having homemade ready-meals in the freezer means not having to settle for packaged meals, which tend to be higher in sodium and calories, and let’s face it, just not as tasty as something you’ve made from scratch.
1. Old Fashioned Chicken Soup
A from-scratch chicken soup made from chicken legs simmered into a simple broth. No need for ready-to-serve chicken broth when it is so simple to make your own.
3. Dill Chicken in Foil
These foil-wrapped packets of chicken in dill make for easy portion control and easy cleanup. The chicken steams in the packet, requiring minimal fat to keep it tender and juicy.
4. Big Batch Chicken, Lentil, Bean & Rice Soup
Looking for something to make ahead of time and have on hand for healthy instant meals? This big-batch of nutritious soup freezes and reheats wonderfully, saving you time and money. With only 180 calories and 5 g of fat, it's also easy on the waistline!

5. Chicken and Broccoli Calzones
Calzones are a terrific lunch idea for the grab-and-go types. If you have more time in the kitchen then consider these options: when cooking for one, try freezing the remaining three calzones for other meals and baking them from frozen. For family meals, get kids involved rolling out the dough or picking vegetables for the filling to help teach them about healthy choices.
6. Spicy Rubbed Chicken
Save money by making your own spice rub at home. It's inexpensive and doesn't contain all of the additives that you would find in a store bought package.
7. Chicken Chili
This traditional chili recipe uses chicken instead of beef for a lighter flavour that holds up to the other ingredients. Serve with rice for a hearty meal, or spoon into tortillas for tasty soft tacos.
8. Individual Lemony Pot Pies
Is there anything better than getting your own individual pot pies? Not only is the presentation so much more special, but also if you’re only cooking for one or two people you can freeze the extra pot pies for another time. These pot pies have a zesty lemony flavour that help balance out the rich gravy inside the pie. Don’t let these pot pies fool you. They are hearty treat that you cannot resist.
9. Saucy Chicken Meatballs & Pasta
This simmered, one-pot meal combines well loved meatballs and whole-wheat pasta to create a budget friendly meal. Any leftovers are just as delicious reheated.
10. Chicken Lasagna Roll Ups
This lighter, healthier version of traditional lasagna is a welcome addition to the dinner table. Serve with crusty bread and a Caesar salad.
11. Chicken and Olive Empanadas
Empanadas are a delicious snack or lunch that hail from south of the equator. It is a Latin pastry and the filling depends greatly on what country is making it. This particular filling is a sweet and savoury combination of flavours common in countries like Peru and Venezuela. Unbaked empanadas can be frozen for up to 2 months and baked to golden perfection!
12. Fiesta Ground Chicken Hashbrowns
Tex Mex lovers will especially adore this easy slow cooker recipe featuring lean ground chicken, diced peppers and frozen hash brown potatoes. Instead of the usual can of cream soup used in many similar slow cooker recipes, I substituted sour cream, salsa and water. This simple change helped save on salt, fat and calories. Top it off with your favourite Tex Mex cheese blend, sliced jalapeno and cilantro. Ole!
13. Chicken Pasta with Whisky Cream Sauce
This easy dinner for two will never fail to impress. This recipe is perfect for both casual and formal occasions, and will undoubtedly make your date feel special.
14. Chicken Parmigiana
This is a perfect meal for the picky eater. This meal combines all that is delicious about pasta and a simple red sauce and then goes as far as to top it off with lightly fried chicken breasts and cheese. Chicken Parmigiana is definitely not a meal for the faint of heart. It is, however, a welcome comfort food when the weather is cool outside. To increase your family’s fiber intake, try substituting your favourite brand of whole grain pasta.
